No it’s not my birthday, no they do not taste like birthday cake, and yes they are delicious. Sprinkles are popular all over the blogs; Averie and Sally will do some amazing things with sprinkles that will blow your mind. I love sweets but I try my best to stay away from them because if I make a batch of cookies I will eat the whole tray.
I am a huge fan of single serving goodies because they allow you to savor every bite without the guilt. There is something about sprinkles that say summer; even though the heat can be unbearable there is lots of color that makes your food pop. This will bring much enjoyment to a dull summer.
I would say my summer has been a bit dull I have been reading a couple of books and my arts and craft projects have been keeping me busy. Some days I would love to do something extraordinary and other days I just want to be a couch potato.
I am happy to have my obsession with pancakes, which can lead me to do some creative things. I am looking to get all creative with this huge tub of sprinkles I got.
Funfetti Pancakes Recipe (Single Serving) :
- 1/2 cup rolled oats
- 1 packet stevia
- 1/2 cup egg whites
- 1/4 cup milk
- 1 tsp vanilla
- 1 tsp baking powder
- 2-4 tsp sprinkles
Recipe Instructions:
- Preheat skillet or griddle on stove until it gets hot.
- Place rolled oats, egg whites, baking powder, vanilla, and milk into food processor and blend.
- Place 2-4 tablespoons of batter into a hot skillet and place 1/2 tsp of sprinkles in each pancake, flip and make sure brown on both sides
Recipe Notes: The griddle or skillet needs to be really hot, use any oil before you put the batter in the skillet. I used about 1/2 tsp of sprinkles for each hotcake. I was able to make four hot cakes with the batter.
