Fresh Cherry Scones (Low-fat)

Low fat Fresh Cherry Scones  How come cherries don’t get as much hype as strawberries? I know you guys know there in season, I guess after the fourth of July they get less popular! Or maybe no one is crazy over cherries because they are such a time consuming fruit to deal with; especially if you don’t have a cherry picker.  Low fat Fresh Cherry Scones Low fat Fresh Cherry Scones  Standing on your feet for 30 minutes pitting a bag of juicy red cherries, that may stain your clothes is not for everyone. However then end results make it so worth all the trouble. These scones are perfect for Sunday brunch, and you can have more than one since there half the fat and calories of a regular cherry scone. 

Low fat Fresh Cherry Scones Fresh Cherry Scones Recipe:
2 cups all-purpose flour
¼ cup sugar sub (I used stevia)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup whipped butter, chilled
1 cup diced cherries
1/2  cup almond milk (more may be needed if dough becomes to dry)
1 egg
Recipe Directions: Preheat oven to 375 degrees. In a large bowl mix flour, sugar, baking powder, and salt. Cut butter into mixture until incorporated. Add cherries to flour mixture. In a medium bowl wisk milk and egg, and slowly pour into dry ingredients, stirring with rubber scraper until dough forms. Knead just until it comes together, 3 or 4 times. Divide dough in half. On lightly floured board, shape each half into a 6-inch round. Cut into 6 wedges. Place on baking sheet lined with parchment paper and bake in the oven for 20-minutes.

    Cherries are so so good right now. We’ve been buying so many and finally got to go cherry picking on the weekend too. These scones look like a great way to use up some of them. They look delicious and love that they are low fat too :)

    I looove scones! And cherries!! What a great combination :) They should definitely get more credit! I guess it’s because the season is so short, which is a shame.
