No Bake Chocolate Peanut Butter Balls (Low Carb)I love peanuts, every time I go to a store I am running to the section where the fats are and buying jars and bags of nuts. The great thing about this recipe is it combines a girl’s favorite foods; peanut butter and chocolate.  One of the best combinations in the world; it also is low in carbs.

It all started with a cup of nuts

When the peanuts become course, add honey and stevia

Needs a little more time in the processor

No it’s ready to dip

One cup of peanuts should give you more balls, but I kept eating and rolling

1/2 square of unsweetened chocolate has 4 grams of carbs

I should have used 4 packets; the chocolate was still bitter with two packets

Chocolate Peanut Butter Balls (Low Carb)

Recipe:

  • 1 cup roasted peanuts
  • 4 packets NuNatrals low carb stevia
  • 1/4 cup ( 4 squares) unsweetened chocolate
  • 2 1/2 tsp honey

Directions:

For Peanut butter Balls

  • Place peanuts into food processor and blend until peanuts become began to crumble, add stevia and honey to the peanuts
  • Blend for 30 seconds until the dough becomes sticky, roll the dough into balls

For Chocolate Sauce

  • Place four squares of unsweetened chocolate into the microwave for 40 seconds
  • Once chocolate has melted add no carb stevia packets to the chocolate and mix together
  • Put chocolate sauce back in the microwave for 30 seconds
  • Place peanut butter balls into the chocolate and coat very well
  • Let sit in the fridge until the chocolate sets, and enjoy

Notes: For this recipe I did a few variations for the batter; the batter will stick together with honey, you can add stevia, coconut sugar, or more honey to the batter (for flavor). I added NuNaturals no carb stevia to keep carbs low. I used unsweetened chocolate and more nor carb stevia (keeping carbs low); if you do not want to keep carbs low in your chocolate; milk or dark chocolate for this recipe as an option.

Dogsitting or Not

015My weekend ended up being a dog sitter for one energetic little pup; of course this was more of a surprise to me. When your fiancé comes home with a puppy what do you do, so far I have heard two different stories from him.
This first one was: One of his coworkers was going on vacation and needed someone to watch her until he got back. I asked him a few questions and the story has changed.

The story now is a homeless man put the puppy into his truck at a red light and ran off when the light turned green.I find that hard to believe since the puppy is potty trained, clean as a whistle, and very friendly.He claims he has a few people wanting to take her in, but I don’t know.

I think after about two years of me saying we can get a dog soon; he finally went and got one.I have been putting him getting a dog off for a very long time. I even told my boss that he may just go out and get one because I kept on putting it off. I never thought he would actually go and get a puppy though.

I am in complete denial about the situation because I am hoping we are just dog sitting. I am hoping! I will let you guys know at the end of the week if we have a puppy are not.

Refrigerator Gone Dead

I don’t know how I managed to blog and create recipes after the fridge went out Wednesday. That old fridge had my tiny little house in clutter. I could barely move around the living room without tripping over one thing and falling over something else. I never knew how much stuff I put into the fridge. I now know why my cabinets are so bare it is all in the fridge or freezer. I guess I have a bad habit liking things to be cold especially in this weather.
I know most of you know I live in AZ and it gets really hot here, and when it gets dark the heat is still in the air. Let’s just say when the sun is up your boiling and when the sun goes down you are cooking in the oven. Coming home from work Wednesday is when the refrigerator decided to die.
I went to get a drink of water and right before I went to sit down I heard a loud pop. I didn’t think anything of it and just sat, then a rubber smell started coming from the fridge. I thought it was gas, but I remember we don’t have gas stove’s in AZ; so then I decided to call country man and tell him. He told me it was the refrigerator and to just turn the temperature up and he would take a look at it.
I did just that and the smell got worse. I was gaging for air (not having a clue what is going on), before I could even call him back; he is yelling through the phone “unplug the refrigerator, do you want to start an electrical fire. I will take a look at it when I get home”. I had a “blond moment” apparently, and I am still having one because I am trying to figure out how all of this is my fault…. I still do not have a clue what happen to the fridge it just started smoking and smelling like rubber.
When he got home he took at it, he could not figure out what was wrong with it, so he called his dad. Well after about two hours of checking this, that, and the compressor (I lost interest) they finally came to the agreement the fridge was a “goner”. That is how we ended up eating out of cooler for the rest of the week.
I am looking on craigslist for another one, they have plenty of them for sell and they are fairly priced. Refrigerators seem like a hot commodity in AZ; with this weather you defiantly need one. I am hoping we will have one by Saturday because it will be hot (116 degrees). I will keep you updated.

Homemade Sweet Vanilla Peanut Butter

I am over buying peanut butter; I realized I can make my own peanut butter for less than what I spend buying peanut butter. I am falling in love with peanut butter again; I think it would half to be all the criticism peanut butter has taken that makes me want to eat more of it.

I am just one of those type of people who likes to do things that are no longer trendy; I love when trends go out of style I actually have a budget (Now that I am talking about budgets: The fridge went out Wednesday and now we are eating out of a cooler, more about that tomorrow) to afford the trend that is no longer appealing.

The only trends that I really keep up with always half to deal with food; I know the latest super food, what diet is the coolest, and what method people are cooking with lately. I think food needs to have its own pop culture segment; that would be so exciting to see the changes food has went through. I think peanut butter will make a comeback pretty soon it just needs a new look.

Recipe:

  • 3 cups peanut butter
  • 10 drops vanilla stevia
  • 1/2 tsp vanilla

Directions:

  • Place peanuts into the food processor and began to blend.
  • Once the peanut butter becomes clumpy use a fork to break the clumps and add Stevia.
  • Blend until smooth and store in a jar
