Oatmeal Pancakes (Single Serving)

My goal was to eat pancakes every day for the rest of my life as a child; now that I am all grown up I struggle trying to get out of bed and make breakfast. I miss the thought of eating pancakes for the rest of my life; but when I have time I enjoy making  a single serving just for me. I am happy with not having a big mess and not so many dishes I half to wash.

I decided that after my break from oats! I miss eating them

They may have a bit of an egg  flavor, I will try egg whites next time.

The batter will be runny but it will thicken up

Make sure your skillet is hot and ready to go

Confession: I have made these three times in one week and lost 2 pounds

 

Oatmeal Pancakes (Single Serving)

Recipe:

  • 1/2 cup oatmeal
  • 1 egg
  • 10 drops stevia
  • 1 tsp baking powder
  • 1/2 cup milk (I used almond)

Instructions: Place all ingredients into the food processor and blend; let the mixture settle and heat up the skillet with oil and let it get really hot.Once the skillet is hot enough pour pancake batter into skillet and enjoy.

NuNatrals Alternative Sweeteners

I had a recipe ready to go, however I received a package from NuNatrals to do a product review and I am so excited! I am happy to try their products because I am a big fan of sugar free sweeteners. Over the past year I have lost 30 pounds. I belive the main reason is because I cut a lot of sugar out of my diet. I was very hard in the beginning for me to get rid of the sweet stuff, but then I found alternatives to sugar; this has made it easier for me to cut out a lot of calories.
I still have sugar (alternative sweeteners) all the time, but my consumption of cane stuff is very low. I am a big fan of stevia and other alternative sweeteners (coconut sugar anyone?) that have fewer calories; I am all about getting more bang for your buck when it comes to calories. I am excited to review NuNatrals products, especially since they were so sweet to send me a big package.
I look forward to doing a giveaway soon I have to do a few experiments in the kitchen so I can come up with a few recipes. I have so many products that they sent me, and since it is only me and country boy; I think this is more than enough for me to do a giveaway pretty soon. Thank you so much NuNatrals for sending me your lovely alternative sweeteners to try. I will defiantly come up with some wicked sugar free recipes. :)

While making these rice cakes, I kept singing: Red, White, and Blue a boy kissed you, took you to the movies and well let’s just say the words after that were never to be said when I was in school.  I am still singing the song in my head, I guess it will be stuck in my head for a while; I will get to the recipe before I sing the rest of those unmentionable words to the song.

It took all my strength to cut into this chocolate

I put in the microwave for 1 minute and 30 seconds

Once the chocolate is smashed with the spoon put in the microwave for 30 seconds until smooth

Let them dry on a cooling rack for about 20 minutes. If you live in AZ, don’t even bother letting them sit out and dry you might ass well put them in the fridge to dry.

I used 5 plain rice cakes for three cubes of melted chocolate; I did not measure the chocolate are count the M&M’S when I made them. Organizing My Hot Mess

I usually have wordless Friday today where I share pictures of the adventures I have through the week and country boys’ infamous “hat”. I decided that I would like to chat, mainly about all my blogging and photo mishaps. I miss just writing and talking to you about what I have been doing lately.

I am really sorry that my blog has been all over the place; but I never realized how much work goes into making a blog look pretty. Then having a hungry fiancé waiting while you snap dinner makes everything, oh so complicated. I want to let you guys know how sorry I am that my blog looks a hot mess, but I am trying to get all the recipes to have some type of order. I am trying to organize my blog so it is easier for you guys to find my new recipes and the older ones I made back in my hay day.

I will be rewriting most of my recipes to ReciPage and that can take some time while uploading new recipes as well. I know I am not as active on Facebook as I should be. I am getting better at it or  at least I am trying to; I’m looking forward to posting more pictures about what goes down in the kitchen( my definition of being active on Facebook).

I really want to do more personal blogs about me and the love of my life and how he can be a pain; especially when he wants me to go fishing in 80 degree weather knowing that we will not catch a bite, but when a pair of big blue eyes is staring me in the face I can just never say no . I really cannot help the fact that I feel in love with a country boy; who wears camouflage hats everywhere we go, even in the rain and thinks it’s so cool.

I love you guys so much and thanks for reading about my weight loss, my love affair with food, and even being there when my bike got stolen! I never told you guys but it was stolen again but thankfully country boy went a got it for me and has ban me from riding it ever since..
