Pink Lara Bars (1 of 1)

Ok this is my last no bake recipe, wait no this will be my last Lara bar recipe for a while! It is pretty warm (108) so I am trying not to turn the oven on but you know the 4th of July is coming up and I plan on doing a lot of baking. I am a very festive person I love to get in the spirit; I guess growing up not celebrating any holidays will make you go all out every chance you get.

 

I must get back to the Lara bars! I never have any almonds I always forget when I get to the grocery store, and food looks better with lots of color; so I decided to add pink dye to the bars to give them a little flare! It worked out great before I realized it, I was eating more then I should have and thought about going for a run. I decided to add shredded coconut to the bars and I am beginning to wonder if coconut is a nut, a seed, or just a fat. I have no clue if anyone could let me in on the truth about this interesting fat I will be the happiest women alive (literally)!

Ingredients
  • 1 cup sunflower seeds
  • 1 cup medjool dates
  • 1 cup shredded coconut
  • 5 drops pink dye
  • 1 tsp vanilla
Instructions
  1. Place sunflower seeds, medjool dates, shredded coconut, and pink food dye into food processor and let blend while adding vanilla extract.
  2. Dumb the mixture and into a pan and form, place it into the freezer for a minute once the mixture is firm cut into bars.

I had all weekend to make this recipe but never got to it because of the other 50 million things I decided to do; I am a procrastinator when it comes to these types of things but I try to get it done. Of course country mouse decides to tell me at the last minute he needed a snack for work, so  I had no choice but to go ahead and make them.

Chewy Snack Recipe that goes great with a a glass of vanilla almond milk..
Ingredients
  • 1 cup dates
  • 1 cup sunflower seeds
  • 1 cup shredded coconut
  • 1/2 cup pepitas seeds
  • 1/4 cup sesame seeds
  • 1/4 cup honey
  • 1 tbs coconut oil
Instructions
  1. Place coconut, pepitas seeds, sesame seeds in a bowl cover with coconut oil and bake for 3 minutes on 350 or until golden brown.
  2. Place dates, honey and vanilla into the food processor blend until creamy; once done add creamy mixture and the seeds to a bowl.
  3. Mix all the mixture until the seeds are all covered, place mixture into a plastic wrap pan and cover.
  4. Let sit in the fridge over night.

Strawberry Spinach Smoothie (Food Processor Style)

I love my food processor but I am thinking it may be time to get a blender; I’ve always believe you do not need a blender to make great smoothies (I think I may have been wrong about that one).

I went over a friend’s house for catch up and she made smoothies in her blender with spinach; there were no bits and pieces of spinach leftover it blended perfectly. I realized at that moment it may be time for me to just give in and purchase a blender.

Maybe when I make smoothies and slushies I will not have any ice left over in the glass that I half to fish out. I still love my food processor and still get great smoothies…
