Buffalo Chicken Salad Wraps
I love eating wraps especially in this weather and now when I know I am going to have a hectic Monday. I am looking forward to this weekend because it is tomato season and it is time to get some fresh tomatoes ( tomato pie anyone!!?). I have a few recipes up my sleeve; I am saving all my energy for the recipes ahead. This week I will be doing lots of wraps and one pot meals to tie me over until I get some tomatoes!!! The buffalo chicken salad wrap recipe is so easy; all you gotta do is throw some chicken breast in the oven bake it until golden brown or until it reaches a temperature of 165 in the middle. Set the chicken aside and let it cool.
Chop up some lettuce, cucumber and bell pepper, once the chicken has cool chop up the chicken. Place chicken, lettuce, cucumber and bell pepper in a bowl and add buffalo sauce. Make sure the chicken salad is well coated with buffalo sauce and add to the wrap.
Buffalo Chicken Salad Wraps Recipe:
- 16 ounces of chopped cooked chicken
- 1 large cucumber cut up
- 2 whole bell peppers roasted and cut up
- 3 cups chopped romaine lettuce
- 1/4 cup and 3 tablespoons of buffalo sauce
- 4 flour tortillas
Recipe directions: add cooked chicken, cucumber, bell pepper, and lettuce to a bowl and mix well. add buffalo sauce and mix until well coated add to a wrap and serve.
How To Series: Dried Blueberries (Part 1)
Blueberry Season is slowly coming to an end and I am stocking up on as many as I can; it has gotten to the point where I may need to be on a season of hoarders! I am hoarding them like no tomorrow. Josh (country man) is so irritated that there is now a limit on how many blueberries I can buy now. I guess the last straw for him is when the gallon bag of blueberries I had stashed in the freezer fell on the floor when he went to open the freezer.When you see your lover turn bright red from anger, you need a bigger freezer or it is time to find a new way to store your blueberries. I decided on the latter, I am always up for a challenge and a bigger fridge is not in are budget. I decided it was finally time to dust off the dehydrator and put it to use! I thought this would be an easy way to dehydrate all my blueberries even the frozen ones! I mean how hard it could be to dehydrate blueberries, all you need to do is put them in the dehydrator turn it on and they are done. Right!? Wrong! I tried that and after day three I realized they were not going to dry out at all! I needed to do something (quick!) or Josh was going to have a fit! I finally remember when my mom sent us to my grandma’s house; she would teach me how to dry fruit in the oven. She would blanch the fruit first and then putt it the oven and let it dry. She w also would use it to freeze vegetables that she had to many in the garden. It seemed pretty easy so I decided to do it “myself” what could go wrong? I dumped all the blueberries in the boiling pot of water and let them boil. I did all the steps I could remember! By the time I was done I ended up with a mushy crispy blueberry. Bug Repellent (Homemade)
Oh you know it’s that time of year again! The buzzing has started and the pooping and itching of the bites have begun. This year I plan on fighting back and keeping this pesky little insect at bay. Mosquitos are running rampant and nearly everyone I know has been bitten or gotten sick from the West Nile virus.
The mosquitoes in Arizona are no joke ( the tiger)! Every time they get me me I have an allergic reaction. Last year I got bit every other day; the bites would swell up to the size of a baseball, they were so painful that I had to call off work! I could not walk without some sort of pain shooting up apart of my body where the bite was.
Josh (countryman) got so fed up that he took a bug zapper and set around the house zapping mosquitoes for about three days until they were finally gone. After that fiasco I decided that I would be prepared this year. When I got my first two bites, I knew it was time for me to take matters into my own hands. I decided to make my own bug repellent rub. I have been using it for a few weeks and those pesky mosquitoes have been now where in sight.
You only need 2 ingredients citronella and coconut oil. I like coconut oil because it is a solid fat like Coco butter and Shea butter; you can rub it on your whole body just like lotion (you can also find it at the grocery store with no problem). Citronella is an essential oil that you can find at most health food and craft stores. The oil may take some getting used to. It is not a bad smell just a strong citrus smell; I would call it a “loud” orange note.
If you never get used to the loud smell, at least you know your skin will not be covered in mosquito bites because they cannot stand the smell of this potent stuff. This bug repellent will keep your skin moist and those pesky mosquitoes away.
Start off with 1 1/2 cups of coconut oil, and add about 20- 30 drops of citronella oil
The coconut oil will melt as you stir in the citronella oil
I stored the oil in glass jars however tins work perfectly
If you want your coconut oil to be firm store in the fridge until it is solid or firm; make sure you check on it, so it is not hard as a rock. You will have a hard time using your bug repellent.
Doogy News
I know Josh (country man) was a little hesitant on letting me talk about what happen to sisany, but he finally said I could if it will give me some comfort. What he does not know is that we are going to Utah in about 9 weeks to get a new puppy.
The past two weeks we have been an emotional wreck over losing her, the pain was so unbearable I could not even function correctly. I am happy I had Josh to console me! I do not think I could have taken another lost by myself. I have no clue what happen! I changed her diet, she had her puppy shots, and everything seemed to be going great.
One day she was not feeling well and acting strange! I did not want to take her to the emergency center because I just do not like hospitals at all. I always think about my mom and a terrible fear comes over me about going into one. I just thought maybe it was a bug and she would get over it, but it was late and Josh really wanted to take her to the hospital so I let him take her.
It all seems like a blur to me, he was on the phone telling me they were running test and everything seemed to be fine. Next thing I know he is not coming home with her, she was very ill and they cannot tell us what happen to her and they had to put her down. I never thought I would be so upset! My heart felt like it fell into the bottom of my stomach. I cried, cried, and cried some more until I finally could not cried anymore. I finally had to realize that she is in a better place; we had some great moments even though she worked my nerves every now and then.
I know it has only been a few weeks but I enjoyed having a little fury creature around the house…, so I am surprising Josh with a puppy!! I just know he will figure out what I am up to soon; every gift I have given him, he already knows what it is!, it has gotten to the point where now he wants to play “let me guess what my gift is?”. The last time I got him a gift I had to get a fake gift just to give him the real gift (two day process). I was so happy I finally got to surprise and shock him at the same time.
I found this lovely blog IdealVizsla and the puppies are about to be born pretty soon, I have worked out all the details with the breeder and we are going to get one soon. I have done a lot of research on Viszla’s; since Josh is a country man who loves to hunt, and I am looking to get into running again (let’s see how long that last, I just may ride my bike with her on the side. I love to ride!). I decided this would be the perfect dog for both of us. I will let you know if he finds out he has been snooping around and I think he will.
