Blueberry Lemonade SmoothieI know the heat is not going to let up anytime soon, so most of my meals I have been cooking early in the morning and on the weekends. This never leaves me time photograph anything special.  Smoothies make great deserts, snacks, and meals; I have been inspired to create smoothie recipes lately by a board I follow on pintrest called the Smoothie Diet. I love this board because the smoothies are mouthwatering and endless.

I was so inspired by this board I decided to create my own pintrest board dedicated to Smoothies; I am not as “active”, I guess I am obsessed with looking at pins more than I am with repining pins. I sometimes think I am playing Bingo while on pintrest. I look, look, refresh, and look some more until I find that “Pin”. In my head I am yelling Bingo!!! That’s the Pin!! I know I am not alone but I also like to comment on pins. I often feel as if I am talking to myself, some people can be very rude but I enjoy all the commens on pins especially at night (more interaction).  I love a good smoothie especially one that makes a refreshing snack. Blueberry Lemonade Smoothie

Blueberry Lemonade Smoothie Recipe:

2 cups blueberries

4 cups ice

1/2 cup lemon juice

2 packets nunatrals stevia

Blueberry Lemonade Smoothie Instructions: Blend all in the food processor and serve in ice cold glasses and enjoy.

Santa Claus Melon Smoothie

I love eating melons and they are absolutely delicious in a smoothie; summer is the best season for berries, melons, and all sorts of juicy fruit.  Santa Claus melon is a new melon for me; I like to try new fruits so when I picked this one up I could not wait to try it. I asked country man if I buy it would he eat it with me, and of course he was not having it! If it is not watermelon or a melon he has seen before he is not having it.

I decided to buy it anyway and see what it would taste like, the flavor was much similar to a honey dew melon without the after taste and it was not sticky at all. I was actually hooked and bought another one, this time I decided to make a smoothie for breakfast and hope that country man would at least try it if I put it in a smoothie. I made the smoothie he took a sip and next thing I know my lovely glass hit the floor and he is calming he tripped over a cord; I find that hard to believe since my glass was the only thing on the floor.

Santa Claus Melon Smoothie Recipe: 

2 cups Santa Claus melon

2 cups almond milk

2 packets stevia

1 tsp vanilla

Recipe Directions : Place all ingredients into the food processor blend well and serve.

The Cucumber Bandit

I am not looking forward to school starting up, but I am almost finished and will be able to move on and get my bachelors. I don’t know if I want to be an education major anymore. I did not want to major in nutrition either; if I decided to do nutrition I would have been in school forever and I am so ready for school to be over.I know there are many majors but I want one where I can find a job practicing in my field after I finish. The cost of education is expensive and I want to be able to pay for my expensive degree.

Sisany is feeling much better today and running around like a monster and biting everything in sight. The vet gave me a list of veggies and fruits I should be feeding her; let’s just say I was to blame for her virus. I have been letting her eat grapes and did not even know I was actually harming her; of course I got an earful from countryman about dog food only!  Now I have a list so I will be able to feed her yummy veggies and fruits.

I started her with cucumber because it has a crunch and since she is teething it will help her teeth. I didn’t expect for her to drag it around the house and leave bits and pieces everywhere.

Funfetti Pancakes (Single Serving)

No it’s not my birthday, no they do not taste like birthday cake, and yes they are delicious. Sprinkles are popular all over the blogs; Averie and Sally will do some amazing things with sprinkles that will blow your mind. I love sweets but I try my best to stay away from them because if I make a batch of cookies I will eat the whole tray.

I am a huge fan of single serving goodies because they allow you to savor every bite without the guilt. There is something about sprinkles that say summer; even though the heat can be unbearable there is lots of color that makes your food pop. This will bring much enjoyment to a dull summer.

I would say my summer has been a bit dull I have been reading a couple of books and my arts and craft projects have been keeping me busy. Some days I would love to do something extraordinary and other days I just want to be a couch potato.

Funfetti Pancakes (Single Serving)

I am happy to have my obsession with pancakes, which can lead me to do some creative things. I am looking to get all creative with this huge tub of sprinkles I got.

Funfetti Pancakes (Single Serving)

Funfetti Pancakes Recipe (Single Serving) :

 

  • 1/2 cup rolled oats
  • 1 packet stevia
  • 1/2 cup egg whites
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 2-4 tsp sprinkles

Recipe Instructions: 

  • Preheat skillet or griddle on stove until it gets hot.
  • Place rolled oats, egg whites, baking powder, vanilla, and milk into food processor and blend.
  • Place 2-4 tablespoons of batter into a hot skillet and place 1/2 tsp of sprinkles in each pancake, flip and make sure brown on both sides

Recipe Notes: The griddle or skillet needs to be really hot, use any oil before you put the batter in the skillet. I used about 1/2 tsp of sprinkles for each hotcake. I was able to make four hot cakes with the batter.
