Lean Ground Chicken Tomato Sauce

When Josh and I first moved in together there were a few things I learned about his cooking and eating habits. The two that stuck out to me was his dislike for eating birds, and he could grill a mean burger. I just couldn’t believe he would not eat chicken (everyone loves chicken), so I decided to buy one of those cooked chickens from the grocery store. He took one bite and would not eat anymore

Over the course of are first year together we ate a lot of salmon, beef, and lentils. I decided that we should revisit the bird situation again. I really missed eating chicken and turkey, so I decided to buy a pound of ground turkey and made this recipe. You know what I found out?  I am not a fan of ground turkey (too much water) and I can’t believe how much of it I ate while growing up! Lean Ground Chicken Tomato Sauce

After eating that meal I decided that maybe I should try chicken, and yes chicken does taste much better then turkey! I am sorry all you turkey lovers, but look on the brightside you have turkey bacon! Although I can’t get Josh to eat chicken on it’s on I love finding easy ways to disguise it.

Lean Ground Chicken Tomato Sauce

Lean Ground Chicken Tomato Sauce
1 pound ground chicken breast
2 tbsps. olive oil
1 medium onion (diced)
3 cloves garlic (diced)
1 can (28 ounces) plum tomatoes, chopped (I used low sodium)
1 can (6 ounces) tomato paste
1 tbsp. sugar (optional)
2 tsps. Italian seasoning
1tsp. cayenne pepper
Salt and pepper to taste
Recipe Directions: In a large saucepan, heat oil over medium heat. Add chopped onion and garlic. Sauté until translucent about 3 minutes; add ground chicken and cook until it becomes white. The ground chicken should break up and crumble about 3-5 minutes. Add tomatoes, tomato paste, Italian seasoning, cayenne pepper, and sugar. Reduce heat to low and simmer for 40 minutes or until mixture thickens. Season with salt and pepper to taste.

    I think it’s so cute that you try to sneak in some chicken for Josh and I’m sure he would gobble this dish right up! The sauce looks incredible and I love the cayenne pepper in here :)
