I think one of the major problems I have with trying to eat right is portion control. I love eating healthy whole foods and probably will for the rest of my life. Just knowing when I am full is the problem! It’s like I have this evil me on one side of my shoulder that continues to tell me to eat. I know I should stop but gosh it’s a fight to see who will win. It gets worst on the weekends because the majority of the time I am home working on my blog (which entails food). I have a weird love affair with food that is a constant battle. So here is where my portion control journey begins. I will keep account of all the things I put in my mouth and hope you come along for the ride!
I usually have carrot juice twice a week! I am big on getting mega doses of vitamin A. I hear so much info on taking mega does of vitamins will harm you! I have never experienced that so I have lots of vitamin A throughout the week.
I also had one egg, ½ cup egg whites, with a tomato, olives, garlic and a piece of toast. I sauté the vegies with no oil and added the eggs. It was kind of dry so I added a bit of dressing that I forgot to photograph.
My 1st snack or second meal was a bit late, but it was ¼ cup pistachios and a ½ cup – ¾ cup jack fruit!! I just LOVE jackfruit so much (it’s getting bad quickly, so expected to see it for the rest of the week)!!!
For lunch I had a double chocolate chip waffle. The ingredients were ½ cup oats, ½ cup egg whites, cocoa powder and 1-2 tbsps. dairy free chocolate chips, stevia drops to taste. This was so good when I heated it up that I wanted another one (portion control is killing me).
For my third snack and fifth snack I munched on these cookies! They are so good, vegan and refined sugar free (made with dates). I am experimenting with them, so you will probably see the recipe pretty soon! I will admit I had more than three and they were so good!! I am trying!
My dinner was plain but it was good once I added a bit of honey mustard (low-fat) dressing. 6 ounces of baked chicken breast ½ cup cooked rice and all the veggies I could eat!
Well that was all my meals for Monday! It all total about 1680 calories. I’m hoping to keep up with this journal and will try to definitely record and talk about what I ate during the week especially on the weekends.
