Peanut Butter Granola (Sugar Free)

I really wanted to call these granola clusters because I had to break the granola apart. However the granola did not hold one cluster what so ever. This is not one of my low-fat recipes for granola, so I suggest you watch the portions when eating this granola. However that maybe hard to do because this homemade sugar free peanut butter granola recipe is quite addictive not to have any sugar in it.

Now I am going to pretend I am a scientist for a bit and do a few comparisons. This will be with regular peanut butter granola and the sugar free one I created. They pretty much taste the same and they are both high in fat. However sugar free peanut butter is lower in calories because it doesn’t have any sugar in it. I think a bonus to add will be the spike you will not give your insulin levels if you eat the sugar free alternative. Peanut Butter Granola (Sugar Free)

When compared to peanut butter granola with sugar in it I don’t think you will miss the sugar at all. It’s still pretty crunchy and holds the crunch after a few days (it’s probably thanks to the fat). If your cutting or kicking sugar and looking for an alternative to peanut butter granola. This is the magical solution. Oh did I mention it tastes wonderful with milk! Peanut Butter Granola (Sugar Free)

Peanut Butter Granola (Sugar Free) Recipe:

3 ¼ cups rolled oats

¾ cup creamy peanut butter

2 ½ tbsps. coconut oil

¾ cup sugar (I used stevia)

1 tsp. vanilla extract

2 egg whites

Recipe Directions: Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a large bowl add rolled oats and set aside. In a microwave safe bowl melt peanut butter until softened (this is very important if you’re using natural peanut butter). Once peanut butter has softened mix in sugar sub, coconut oil and vanilla extract. Add mixture to oats and mixed until the peanut butter is combined with the oats. Add egg whites to mixture and stir in completely. Spread mixture onto parchment paper and place in the oven for 20-30 minutes or until the granola is golden brown.  Once cool break apart and store in an air tight container.
